Katrine Røed – Founder of Eftir

Katrine Røed is the visionary founder behind Eftir, a unique eatery and clothing concept recently opened at Grünerløkka in Oslo. Originally from Nøtterøy and now living in Oslo with her musician partner Chris Emmington from California, Katrine brings a fresh perspective on sustainability rooted in her global experiences as a passionate surfer and environmentalist.

Together with her partner Cecilie Ova Nielsen, Katrine created Eftir to showcase that sustainability and reuse can stand for quality and uniqueness—rather than restrictions. With years of travel and a deep connection to the ocean, Katrine has seen firsthand how overconsumption damages our environment. Her mission? To build something positive that helps people reduce waste without having to give up their lifestyles entirely.

Drawing inspiration from California’s booming second-hand fashion scene, Katrine introduced a model where individuals can sell their clothes and receive instant store credit or cash in return. Despite the economic challenges of starting a second-hand fashion business in Norway—especially with VAT still applied to used items—Katrine felt compelled to give it a shot.

“I believe we can feel more content trading high-quality clothes instead of constantly buying new ones,” she explains. “There’s so much waste in the fashion industry, and we need better solutions that people can actually adopt.”

But Eftir is more than a clothing store. It’s also a café, an interior shop, and a platform for art and sustainable living. Everything in the space is for sale, from plants and ceramics to artwork and vintage furniture. The food concept came to life with German chef Raphael Radhuber, who shares Katrine’s passion for sustainable cooking and preservation. Together, they piloted an innovative reuse packaging system for take-away, powered by the Vytal app. Customers can borrow containers free of charge and return them within 14 days—reducing single-use waste and paving the way for a circular food culture in Oslo.

With support from Innovation Norway, Eftir is now testing this system with the goal of expanding it across cafés and restaurants in the city.

Katrine and her team are proud of what they’ve built and hope to inspire others to take small, conscious steps toward a better planet.

“No one can do everything, but everyone can do something. We hope people will visit us, try a warm drink in a reusable cup, enjoy a good meal, and maybe sell or swap some of their quality clothes.”
